Handheld Shakshuka Pitas

These pitas can be a healthy quick lunch option or a fun grab-and-go. Made with simple ingredients, including a sumac cucumber salad and Shooka Sauce, this recipe brings all the flavors of Shakshuka into a pita for a quick, delicious bite.

Ingredients:

  • ½ cup Shooka Sauce
  • 2 eggs
  • 1 persian cucumber
  • ½ cup shredded cabbage
  • juice of ½ lemon
  • sumac
  • Feta cheese, crumbled
  • Fresh herbs
  • Salt and pepper, to taste

Directions:

1. In a medium-sized bowl, combine the shredded cabbage, diced cucumber, lemon juice, salt, pepper, and sumac. Toss everything together and set the salad aside while you prepare the Shakshuka.

2. In a pan over medium heat, pour Shooka Sauce into a small pan and bring it to a simmer. Crack the eggs into the sauce, cover the pan, and let the eggs poach until the whites are cooked but the yolks remain slightly runny, about 5-7 minutes.

3. Cut the pitas open and stuff them with the salad mixture. Spoon in the Shakshuka sauce and gently place the poached egg on top. Sprinkle the crumbled feta on top, and serve immediately.

Tip: Use a thicker pita bread to soak up the sauce without breakage!
